That's really peculiar, as Microsoft Store is not deleted in while making the image.
Have you tried using the standard Powershell included in Windows instead of Powershell 7?
Apparently this issue was caused by icacls not taking finding the Administrators user group in languages where the word 'administrator' is spelled differently. An update was pushed that should fix...

I actually noticed that there is a difference when running the script from Terminal (as it cannot takeown the registry keys - maybe a sandbox measure?) compared to running it...
You have to update Winget using Store. You can use the Store without having to update Winget beforehand. Will fix this
It's actually testbed. 
Sorry, could you create a pull request with these changes again? Seems like they have been overwritten and it would be nice to bring it back in the latest release....
