pretty sure its not that hard to make a new profile, the process duration would have the same duration as using the fabric installer.
this issue has been fixed by this [PR](https://github.com/PojavLauncherTeam/PojavLauncher_iOS/pull/826)!
please change the minecraft profile version by pressing the "+" button beside your minecraft account profile, and pick your desired version.
not sure if this is even possible, as it isn't possible to port this launcher to the App Store *yet* due to it relying on JIT, and Apple does not...
