It looks like there is no firmware on the ESP32. Try loading from the WebUI. You might need to use the boot button. See the Wiki
The github release install method works fine if you are already in waiting for upload (bootloader) mode.
Attach a photo of your controller so I can see the wiring. Send the `?` command with the probe circuit inactive and active and show the response.
You had to change it to make it work in 3.7.10?

I think you broke your config when you upgraded. You returned to the old firmware and things still did not work. You fixed some things in the config and now...
Did you try fixing that in the new firmware?
