Update dependencies to latest versions

Currently, a bunch of deps are out of date and cause duplicated dependencies with different versions thoughout my dependency chain.

For projects that are rarely updated, I think it is better to leave out the patch versions from Cargo.toml and to update the minor and major versions every once in a while.
