oomphinc/composer-installers-extender can now probably also be removed from composer.json

@Guite I went for the obvious ones and assets there might be more to go. This should work on current 3x with full BC.. well apart from ability to reinstall those assets on production, because now it's in webpack.

Closing as unneeded because core 4.0 will be using Webpack, BS5, FA6 etc.
