Change instance folder location

Appdata is a horrid spot for the whole entire instance to be kept in, please allow for changing the default location for these. Many users have their C drive as their smallest drive and this junks up much of the space...

iirc you can just edit your config json for that; I just haven't exposed that in the UI yet.
