Enable back unit tests for ZETA deposits

In the file

x/fungible/keeper/deposits_test.go

and any other referenced by this issue link, some unit tests have been disabled since we have ZETA connected disabled at the smart contract level.

These tests should be enabled back and pass once we enable Zeta connector v2

In addition E2E tests for ZETA v2 should be enabled back
