Setting and Updating Account Email

Summary

It's unclear what email from GitHub authentication is being associated with users' Zed accounts, and unclear how best to update that email once set.

Description

Users often write in asking what email are we pulling from people's GitHub, and what do they need to change in GitHub + do in Zed to change what is in our database. "Update my email", "what email are you pulling in for me", "how do I manage" is being asked more and more, and as support, I don't actually know what to tell people, nor do we have any documentation on what to do to fix it for them.

Expected Behavior: Clear guidelines on what email is pulled in, and how to update it within Zed. Actual Behavior: It's unclear

Fixing this would look like

• we know the email address used
• we update https://zed.dev/docs/accounts to reflect it
• we know how to tell users to change their email address
• we update https://zed.dev/docs/accounts to reflect it
• bonus points if we can also pull that email change through to Stripe so we don't end up in situations where Stripe and Zed auth are mismatched (this can happen today)
