Expand or remove zarr and xarray version restrictions

Prior to releasing V2, we should either change the restrictions for Zarr and Xarray added in #682 and https://github.com/zarr-developers/VirtualiZarr/pull/673 to specify a maximum version or remove them depending on compatibility progress.

I think with #765 this issue will become obsolete? As then we will be compatible with the latest versions of both xarray and zarr.

Pretty much. It'd probably be a good idea to pin Zarr<4.0 and Icechunk<2.0 since we are so intertwined with those libraries' current APIs.
