[Migrated] Add ability to set new Kinesis config

There are new kinesis config options that are not currently supported in kappa. I simply expended on the work by @spascou here: https://github.com/Miserlou/Zappa/issues/1973

This should allow for setting of all new config parameters and leave everything as default if they are not specified.

This remains an outstanding issue in the latest zappa release 0.55.0

As I understand kappa is pretty defunct, so if this is currently supported by kappa (last release Feb 14, 2017) we'll need quite a bit of work to migrate from kappa to whatever the resulting solution would be.
