Our extension can work on vscode 1.75.0 or greater as our tests didn't break, we may consider incrementing the version in the package.json.

Yes, and we should bump our VSCode version used in integration test accordingly. We should align all VSCode version references in the project to the latest. It auto updates so most users are always running the latest version.
