There is a far easier way to install ubuntu
To install ubuntu, download the server iso of your choice, dd it to a usb drive, boot it up in your apu2 and when the boot:
screen appears type the following:
install vga=off console=ttyS0,115200n8
And then hit enter.
on 14.04 you may see this screen:
Press to see video modes available, to continue, or wait 30 sec
If you do hit then hit <SPACE>
then <ENTER>
, should boot fine.
I tried the latest ubuntu-16.04.2-server-amd64.iso and for some reason the grub menu is borked and nothing works. Maybe some earlier isos for 16.04 work properly.
I have succesfully installed and booted into 17.04 off the vanilla install disk using this.

With Ubuntu 20.04 I found I had to type live initrd=initrd.gz console=ttyS0,115200
which worked fine.
