Translate docs to spanish

Description

I'm creating this draft PR to start the process of translating the documentation to spanish. I will try to take the lead on this, but any help from my fellow spanish speakers would be much appreciated. Just comment and I will invite you to my fork so we don't start scattering PRs all over the place 😉

Is there any place I can find v0.17.3 or this docs no longer need to be translated? I realized they've been translated but not being used in the versioned_docs folder...

No longer needed :) I would say just focus on 0.18 and next (which is the current unreleased version under docs/).

As stated in the README.md, the l10n version of documentation should be translated via GitLocalize.

I am closing this pull request as translation not present in GitLocalize is likely going to be lost during a sync from GitLocalize. You may contribute the existing progress to the GitLocalize instead.
