mermaid allows us to render graphs like #396

@MarcoWorms @InfiniteCoder100 I'm exploring adding the mermaid charts and having some issues with the older versions of docusaurus (v2). I'll keep trying to get it to work with a 2.x version of docusaurus, but I wanted to see if there has been discussion of biting the bullet and just migrating to v3. Might be worth the effort and will future proof things a bit.
