Code Quality: Upgrade assets to match Windows 11 styles

Small code quality change; updated the file association assets to WinUI3 alternatives/ones that aren't based on the old QuickPad logo.

They're actually just the Fluent Emoji 😅 It took me a while to find the perfect ones to complement each file type, so here they are!

We should make sure they properly scale, additionally, it might be worth doing some research with users to see if they easily identify the icons with the associated file types.

Good idea. I read the uap spec and turns out you can't use SVG images for file icons, maybe I should try rendering them again at a higher quality...
