Describe the bug
The list of effects does not display their description, the settings interface does not display the name of the items
Running with GTK_THEME=Adwaita changes the GTK theme but does not solve the problem

The flatpak package behaves similarly
Did you see if the version is the latest available 7.2.3? The first thing to do in this case would be an upgrade. This is an issue I can't reproduce here on Arch Linux. And based on the images it feels like the EasyEffects package you are using may not have be compatible with some of the system libraries (gtk4 and libadwaita for example) that you have installed.
