[Improvement]: Need to tryout and re-write the observability documentation for MI

Currently, this https://mi.docs.wso2.com/en/latest/observe-and-manage/setting-up-cloud-native-observability-on-a-vm/ doc provide info on how to create the Grafana based observability in both VM and Helm variants.

In the VM section, steps given to setup are not working since the Grafana graphs need both Prometheus and loki datasources. We need to retry this scenario and re-write the docs.

In the helm section, following the given steps gives an error and we need to fix the issues in helm charts.
