Use Pydantic for automating most event payload sanitisers

Most sanitisers could be implemented using Pydantic.

It'd also help to create types for event payloads, which will improve developer experience.

@mmikita95 great work migrating Component to Pydantic, this is a bigger Pydantic migration for the pipeline.
