Docs: Add an "Example Projects" section

It may be neat to have a set of "example projects" where sample real-world projects are listed.

Here's an example of a project we've been using WireViz with to design the 20+ harnesses for a scientific CubeSat satellite mission: https://github.com/CalgaryToSpace/CTS-SAT-1-Cable-Harnesses [edit: full disclosure that I'm a heavy contributor to this project]

I think this is a good idea. Thank you for suggesting your own project as an entry. Maybe we can use this issue to collect some more entries to be included. Listing a few real-world examples could be valuable for end-users.

A similar list of software tools that use and depend on WireViz could also be collected here. One such example is wireviz-web by @amotl. I've not (yet) contributed to that tool, but the author is also a co-maintainer of WireViz.

When suggesting links, please specify your relation (if any) to the projects or sites the links point to. It's nice to know if the owners approve linking to their sites/projects.
