Encoding of "Umlauts"

The Issue ist that "Umlauts" like ä, ö etc get encoded wrong in my setup.

How can I fix that?

Example:

Good question. Is this in the RSS feed, or in the article as presented on FB, or at the /fb-instant endpoint?

It is the definitely present on FB and the /fb-instant endpoint. Also in the feed for FB, I checked.
