Systemise and automate package updates

We need to get the package updates completely automated and have manual actions only when incompatibilities are detected.

To do so, I started to add a tags.yaml in image folders and identify how to get the sources, so we can later automate version bumps.

We need to get further in this process to avoid issues like whalebrew/whalebrew#135.
