[Documentation] - better docs around adding to react project

The current link to a react example consuming web components was written for a stenciljs-based WC and that won't work for a vanilla WC since it doesn't have the extra defineCustomElements export that stencil puts in WCs. Make a better example repo and add it to the docs.
