[SPEC] Make use of Decentralized Price Oracles instead of Coingecko

Overview

Relaying directly on a free & centralized API price oracle like Coingecko happen to be unreliable (see #402) Instead we should make use of Decentralized, on-chain Smart contracts for providing us the prices of the tokens. Examples of these protocols are UniswapV3 and 1Inch.
