feature request - dev filter to redirect all emails to a specified email

It would be good if there was an option to force the destination email, either in the ui or via a filter.

I've got this enabled on a woocommerce site and I'm nervous to swap it out for a snippet that is going to force it to email everything to me.

But I need to work on the emails.

If I've got it wrong though, then emails are going to start leaking out.

I was hoping there might be some filter in the code in this plugin but I've not found anything?
