Update Elasticsearch cluster statefulset files

Since the Docker image was updated here, we are able to create an Elasticsearch cluster in a more efficient way and it would be necessary to add the necessary changes in the files corresponding to the creation of the cluster through the use of Kubernetes.

In addition, the relevant documentation must be added.

is there any update on this? it seems the current statefulset.yaml file provided in the repo is broken.
