investigate setting stripe tax to false

some users report getting the error "Stripe Tax has not been activated on your account. Please visit https://stripe.com/docs/tax/set-up to get started."

Perhaps having default set to false can avoid this issue?

@vincanger It seems that the automatic tax feature only work for specific regions. I have a business in Brazil and the integration breaks with the automatic_tax enabled.
