[CHORE] Remove duplicated NIF in Dockerfile

Describe the chore

Currently we use some paths to account for the fact that we're building cross-platform docker images... but they aren't cleaned up https://github.com/wasmCloud/wasmcloud-otp/blob/main/wasmcloud_host/Dockerfile#L85-L89. This ends up increasing our docker image size by around 20MB, which isn't the end of the world, but should be removed.
