Infrastructure: Update glob and sort output when running `reference-tables` and `coverage-report`

Supersedes #3037

• Bumps glob from 8.1.0 to 11.0.0.
• Update scripts for reference-tables and coverage-report to maintain previous sort order since nosort:true is no longer supported and result sets are no longer sorted; removed in 9.0.
