reflect current kernel version in documentation

Hey evie404, thanks for your input. The 5.10 kernel is in the current (1.4) branch not in equuleus (1.3).

in the latest VyOS 1.3.1-S1 Version the kernel is: 5.4.187-amd64-vyos if you build equuleus from scratch it should be 5.4.200

there is a meta task which reflect all kernel changes https://phabricator.vyos.net/T3318 maybe you can adjust your commit with this informations.

@rebortg thanks a lot for your feedback. i updated the documentation to reflect the kernel versions and also linked to the phabricator task. i didn't know about the task don't have access to lts images so couldn't validate anything but what was latest.
