Make default video source for composite views gui selectable

This was planed as we implemented defaults for all composite modes with one option. As now each composite view has its own setting i'm not sure how to relize this without bloating the ui. The goal is to allow to change the default A without restarting the core.

As discussed offline scene button are different thing which may also be useful but dont solve the goal of this enhancement. So if you want to reject this enhancement its fine but dont close it and say a different thing solves it which it doesnt.

For voctomix 2 I thought it would be nice to have the option to define fixed composites (with preset soruces) which can appear as buttons in the main or extra tool bar or even explicitly (by hiding the advanced mixing buttons). Would that be a good way @derpeter ?
