Improve configurator state handling

We need to improve the DX (developer experience) of working with configurator state by adding more type safety, consolidating side effects and collocating the update logic closer to the components that trigger it.

It would probably make best sense to ditch the big reducer, and introduce a few of Zustand stores per editor domain (chartState, layoutState, ...).
