Great idea! Colors are a really great idea and helps a lot for users and often make things more scannable than text and icons. For better continuity, colors could also be presented in the block-picker.
I think for greater accessibility and even better continuity, the icons could also be presented. Although that comes with the editor-experience criterion that icons which are chosen should not look like interactive UI-items to the editor. Maybe they could look like they are disabled to avoid that.
Notably, Craft 5 does this with Matrix and Entry Types, so we might copy that!
