Using the VegaValueFormatterParams at @mattrussell36 's suggestion to improve some of the typing in this file.

I've added some properties to the Market type in the liquidity lib, which is a change I'm not certain about. Happy to change that up if it's not correctly modelled or how we do things, etc.
