Rename cmake file

This is an initial PR of a potential series of PR's coming as I started to mess about with this project on my own Switch.

This PR fixes an issue that I've encountered on my Manjaro machine where the FindLIBNX.cmake file wasn't found by CMake due to the capitalization not being correct.

I'll see what other PRs I can submit :]

I'm putting this up as a draft for now until I figure out some kinks in my dev environment. 💯
