`underlying` returning incorrect asset quantities

@thal0x it's not obvious to me that this was actually returning incorrect quantities, or that it was a frontend issue.

missed this the first time through, but looks like there was a little switcheroo in the assignments of the underlying fields:

i.e. exerciseAmount being assigned to underlying position, vice versa
