Feat: Cockroach Adapter

Adding support for CockroachDB.

To Do's:

• [x] Extend PostgreSQL Adapter
• [ ] Override functions that do not pass the test
• [ ] Check if all tests pass
• [ ] Open PR for review and merge

The following adapter is on hold (Waiting for PostgreSQL adapter to be implemented completely #107 )
