Proper Language selection for es-ES and ES-mx

Describe the Bug

In umami language selection, the languages for files "en-GB.json" and "en-US.json" are "English (UK)" and "English (US)".

The same should be done with "Spanish" (Español) since we have two files "es-ES.json" and "es-MX.json" which should be "Español (ES)" and "Español (MX)" for Spain and Mexico.

Or just leave the es-ES.json since is the currently up-to-date language file.
