Try without the `stream_snapshot` settings - remove lines 9 and 10 from the config you included. The doorbell should work with a non-stream snapshot.

And I can't help too much with `nodered`, I don't use it, but you should see the image on any lovelace cards being updated. We also fire an `aarlo_snapshot_updated` event...
