add libreoffice to docker-compose.yml

I have been looking for a solution to convert odt files into pdfs during the docker-compose installation for a while now. unfortunately i am not able to install libreoffice here to be able to output pdfs. Maybe someone here can provide an compose file with libreoffice already implemented? Simply adding libreoffice as an extra container did not work.
