How to change default connected address?

It's the address that Tonkeeper (which you connected) gives to us. If you want to connect something else using TON connect, or another Tonkeeper wallet, you can delete the temp folder or the part of it which has tonconnect in its name and blueprint will ask you to connect again on the next run.

another question regarding the same topic which I have is that, in the temp file, I am able to see the property which is secret key, private key

it is really safe to just have the temp file stores like that?

This is secret key from ton connect session, not from the wallet itself. Closing
