Make M5SAM_LIST_MAX_COUNT overridable

Not sure why anyone would want to browse such long menus, but 32 is arbitraty and there are some situations where this value needs to be overriden.

This change allows a #define to override the value without breaking backwards compatibility as long as it's done before the #include.
