pandas v2

Pandas moved to version 2 recently, with a fair few changes. We should keep an eye out for any problems/bugs arising from using tobac with the new version of pandas

They also have a new way of installing optional depencies: https://pandas.pydata.org/docs/dev/getting_started/install.html#optional-dependencies The performance option may be useful but I'm not sure if this can be specified with conda instead of pip?
