`useShortcut` hijacks global shortcuts even if targeted to element

@hanneskuettner this might be out of scope, but if there are improvements to `useShortcut`. Would you be able to make this exportable from `@directus/composables`. I ended up just copying this...

Added missing fields for graphql `fields_in_collection` query

@br41nslug not sure if the documentation should also be updated [here](https://docs.directus.io/reference/system/fields.html#the-field-object) as it is missing `is_generated`.
