Enclosure plugin support?

Hello, does this also export additional temp & humidity measures from Enclosure plugin? I'd like to get historical metrics for not just the printer's sensors, but also the additional sensors I've set up.

Not yet. It is possible, if the plugin broadcasts these information, but currently I have no capacity to dive into it.

If you are interested to implement this, you probably can do it like the raspberry_core_temperature is implemented.
