Tasks that should take 20m to achieve in Tekton sometimes take 5 days of work
This is basically the Tekton user experience.
There's a lot of stuff in the docs that just doesn't work or is out of date.
I think having more examples of common tasks, like building and pushing images with docker to real repositories, complete with all the manifests including secrets and service accounts with placeholder values, would be ideal.
I can author these. But the problem is, the right way to do things implied by the docs doesn't work (#8716).
We have contributed to tekton in the past and we think it's one of the best tools in the Kubernetes ecosystem so we're looking forward to addressing this as collaborators!

Can you share links to these? It would be really useful to share them here so there's a central place to track them and coordinate work on improving the docs for all.
Also as I mentioned on the issue you linked above, it's worth noting that the Tekton Pipelines release you're using is quite old and was end of life over a year ago. It would be a good idea to consider updating to a more recent and supported release.
When reviewing the docs, can you confirm that you're viewing the correct version corresponding to the release you're using? In some places the available options may depend on the API version used too, e.g. tekton.dev/v1beta1 vs. tekton.dev/v1
