fix: set correct metrics name when using a task resolver
Changes
When looking at the taskrun metrics generated by tekton, there are a lot that have either task="anonymous" or task="". This PR looks into the resolver params to set a "name" against a task. Where the taskSpec is inlined, we can also use the "DisplayName" if its set.

Hi @garethjevans. Thanks for your PR.
I'm waiting for a tektoncd member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.
Once the patch is verified, the new status will be reflected by the ok-to-test label.
I understand the commands that are listed here.

@khrm you can close this, the fix has also been done in https://github.com/tektoncd/pipeline/pull/7731
any chance you can backport that fix to 0.56.x? and 0.59.x?
@garethjevans https://github.com/tektoncd/pipeline/pull/7731 has been back ported to the LTS releases. Should I close this?
