Fixing maven/0.3 test fail due to more that one PVC is bound

An extra PVC resource has been added in the workspace of new test cases maven/0.3. It's Taskrun is failing due to more than one PVC with message: "more than one PersistentVolumeClaim is bound" We found that this is a known issue and found few Pipelines issue links with this discussion: Issue#3480, Issue#3085, Issue#2979 /kind bug

I'm waiting for a tektoncd member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.
Once the patch is verified, the new status will be reflected by the ok-to-test label.

There is a few things :
- It should work, without affinity assistant (this should be documented)
- The
Taskdoesn't specify to mount a PVC for the local-repo, so technically, it's not on the task itself - Even if we agreed on removing this optional workspace, it would need to be in a new version as this would break current users.
But, I don't think we need to fix this, as I don't really this it as something to be fixed.
