Update all wiki links

Ensure all wiki links point to the correct location.

Just confirming with @bubelov that we can go back to using wiki.btcmap.org now that we self-host.

I updated them all to use gitea.btcmap.org so at least they are now all working again.

I'm still holding out hope that we can now use the wiki.btcmap.org subdomain as we are now self-hosted, but am waiting on confirmation from @bubelov .

I think it's possible to this via a reverse proxy in Caddy using the following:

wiki.btcmap.org {
    redir https://gitea.btcmap.org/teambtcmap/btcmap-general/wiki{uri} 301
}
