feat: adjust requirement to use latest version for parsedown-extra

To address issue:

  • parsedown-extra is currently at latest stable v0.8.1 and parsedown-extra-plugin's composer fixes it to v0.8.0

Urm, I just hit https://github.com/erusev/parsedown-extra/issues/152

Digging further, I see you also had a similar PR here: https://github.com/mecha-cms/mecha/pull/90

From 2019 to now 2022, it's weird erusev/parsedown-extra has not addressed this
