chore: Update nixpkgs to the latest

prisma wants a more recent node (we're at 20.9, it wants 20.19+), and we need to update this periodically anyway.

How was it tested?

• [x] buck2 run dev works
• [x] can create components and run actions locally
• [ ] CI / integration tests pass

Not sure why gjs is having issues. It doesn't repro locally. It was updated in nixpkgs 3 weeks ago, which should be ample time to have sussed out issues. ... and it's a little puzzling that we're depending on Gnome/GTK packages.
